Light roast needs hotter water than you think.

You're brewing at 195°F because the internet said so. Light roasts are dense—they need 205°F to fully extract.

Here's the truth:

• Light roast = higher density, needs more heat
• Dark roast = lower density, needs less heat
• Brew light roast at 203-205°F
• Grind finer than medium roast
• Longer brew time extracts sweetness

Raised temp to 205°F: grassy flavor disappeared, sweetness exploded.

Hot take: Most people hate light roast because they're brewing it wrong, not because the coffee is bad.
