This isn’t rushed. It’s remembered.

Our tamal is built the way it should be—slow, intentional, and rooted in time. We don’t rush processes, and we don’t rush flavor.

Wrapped and filled with local Oaxaca cheese, huitlacoche, oyster mushrooms, and chayote, each layer carries its own story. Finished with our house-made mole madre and crema, it lands on the plate exactly when it’s ready—not a moment sooner.

Some things can’t be forced. They’re allowed to become what they are.
