Happy International Kimchi Day!
November 22 as chosen for this day by the Corean government in 2020 and in August of this year in California!

Kimchi (/ˈkɪmtʃiː/; Korean:김치, romanized: gimchi, IPA: [kim.tɕʰi]), a staple food in Corean cuisine, is a traditional side dish (반찬, banchan) of salted and fermented vegetables, such as napa cabbage and Corean radish, made with a widely varying selection of seasonings, including gochugaru (고춧가루), (Corean chili powder), spring onions, garlic, ginger and jeotgal (젓갈) (salted seafood), etc. It is also used in a variety of soups and stews. It is eaten as a side dish with almost every Corean meal.
