Cactus Coffee Shop was born of a dream to build a new life for me and my children. I’ve built beautiful spaces, worn my newborn while making drinks, watched him take his first steps behind the counter, taught my girls to make cappuccinos and take orders. This little business has been unmade and rebuilt so many times, from a drive-thru to a trailer, a kiosk, catering carts, & store fronts. Each time a challenge arose I found a way to pivot and keep this light shining a little longer. I poured everything I had into this amazing shop, in the hard times and the good.

This past year has been the most difficult by far, and I’ve made the choice to pivot again, but this time, I’m pouring into me, into my kids, into a more balanced life for my little family. It’s one of hardest experiences I’ve had, this letting go.

While it’s tough, it’s also very exciting that I’m not forced to s***f out that flame. I get the chance to pass the torch on to amazing people who are eager to pour their own hearts into what I’ve built. Cactus may be ending, but the spaces and community we created together will live on with new names and energy.

Chris Clark of Fair Dinkum Coffee Co. will be assuming the Wimberley space shared with the Sugar Shack Bakery beginning Monday 11/28. Chris and his family are extremely excited to serve the Wimberley community. He has great plans in the works to continue making the spot on the square a warm and welcoming place to gather. It brings me much joy to be able to pass this along to a member of our village to cultivate it for years to come.

Crystal Sepulveda with Cafe Mio is becoming the new coffee boss for the kiosk in Stone Oak

I want to give my most heartfelt thanks to everyone who has supported me through the years. I have had the very best time here with you. This has been such a fulfilling dream, and I am grateful to have been able to go on this journey with you. Thank you, for all the coffee we’ve shared through the years.

Cactus Coffee Shop is a mobile cafe experience bringing the coffee shop right into your event, serving creative and exciting beverages to your family and friends. Guests are delighted to belly up to the bar and place their signature coffee order as well as try new delicious combinations themed to highlight the hosts' favorite flavors. Our pop up coffee bars are a novel way to surprise your guests with something unique and fun that everyone can enjoy! We are able to accommodate any dietary restriction and ensure that everyone has something tasty to enjoy.

We offer hot and iced espresso drinks, drip coffee service, handcrafted lemonades, as well as boba teas. We can also provide breakfast pastries and dessert options through our partnership with Sugar Shack Bakery. We can station indoors or out and only require a regular 110v plug for service, so no loud generators will disrupt the day.
