Marble Cake Loaf with Biscoff Bliss

Ingredients
• 2 cups (250g) all-purpose flour
• 1½ teaspoons baking powder
• ½ teaspoon baking soda
• 1 cup (225g) unsalted butter or vegetable oil
• 1 cup (200g) granulated sugar
• 3 large eggs, room temperature
• ½ cup (120ml) milk
• 1 teaspoon vanilla extract
• 3 tablespoons (45g) Biscoff spread
• 2 tablespoons (15g) cocoa powder
• 1 tablespoon (15ml) warm water

Instructions

In a bowl, mix flour, baking powder, and baking soda. Set aside.

In another large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla and milk.

Gradually add the dry ingredients and mix until smooth.

Divide the batter into three portions:
• Leave one plain (vanilla).
• Add cocoa powder mixed with warm water to one portion.
• Add melted Biscoff spread to the third portion.

Grease and line a loaf pan. Spoon the three batters alternately into the pan, then gently swirl with a skewer or knife to create a marble effect.

Bake in a preheated oven at 170°C (340°F) for 50–55 minutes, or until a toothpick inserted in the center comes out clean.

Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Christmas Fruit Cake

Ingredients
• 1 ½ cups (190g) all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• 1 teaspoon ground cinnamon
• ½ teaspoon ground nutmeg
• ½ teaspoon allspice or mixed spice
• ¼ teaspoon salt
• ½ cup (115g) unsalted butter, softened
• ¾ cup (150g) brown sugar
• 2 large eggs, room temperature
• 2 tablespoons molasses or treacle (optional, for rich flavor)
• ½ cup (120ml) orange juice (freshly squeezed preferred)
• 2 tablespoons rum or brandy (optional, for soaking and brushing)
• 1 teaspoon vanilla extract
• 1 teaspoon grated orange zest
• 1 ½ cups (200g) mixed dried fruits (raisins, currants, sultanas, cranberries, candied peel)
• ½ cup (60g) glazed cherries, halved
• ½ cup (60g) chopped nuts (optional – walnuts, almonds, pecans)

Instructions
If time allows, soak dried fruits in orange juice and rum overnight (or at least 1 hour) for extra moistness.
Preheat oven to 325°F (160°C). Grease and line a 9x5-inch loaf pan.
Cream butter and brown sugar until fluffy. Beat in eggs one at a time, then add molasses, vanilla, and orange zest.
In another bowl, whisk flour, baking powder, baking soda, spices, and salt. Gently fold dry mixture into the wet mixture, alternating with the orange juice.
Stir in soaked dried fruits, glazed cherries, and nuts until just combined.
Spoon batter into prepared loaf pan, smoothing the top. Bake 60–70 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 15 minutes, then transfer to a wire rack. Brush warm loaf with a little extra rum or brandy if desired for flavor and preservation.
