Duck ragù sits in the colder corners of Italian cooking, where game, wine, aromatics and time do most of the work.

At Fugazzi, we’re serving it with pappardelle, the broad Tuscan pasta made for catching a proper braise. Braised duck leg brings the richness, peas bring sweetness, and smoked paprika gives the whole thing a little smoke and warmth.
