FUJI MATCHA
We have changed our Japanese Matcha tea blend.
Expect intenser umami, less sweet. We hope you prefer it....we do! Let us know.
This picture is a genuine tea field of our supply source, from the Shizuoka Prefecture, with Mt Fuji superimposed. (Shizuoka sits in the foothills of Mt Fuji, rolling down to the sea).
Our Matcha is sourced from these particular fields and other surrounding sister estates.
It is helpful to understand the method of Matcha selection. Single origin Matcha is problematic in that it is historically inconsistent. This is the result of seasonal variation and very often, within individual estate variables, in any given season. Hence, the art of blending, not dissimilar in a way, to coffee.
In Japan, quality and consistency are paramount, in particular of higher volume processing, to ensure customer expectations are met, year in, year out.
Our Tea Master is in a lineage of generational farming and processing, since the 1800's. Blending is an art that cannot be replicated by machines. Raw product is still processed, graded and sampled by hand rolling, ( a very difficult craft to master) before bulk stone grinding and blending occurs to establish the perfect balance.
