We buy Grade 1 coffee. Recent crops, stored in GrainPro bags, season after season. It costs more, but for us it’s non-negotiable.

This week we received two Ethiopian roasted samples from a supplier we work with: one Grade 4, one Grade 1.

The difference is obvious.

Lower graded coffees are often full of defects: quakers (under-ripened beans), pest damage, inconsistency in bean size and density, all things that lead to uneven roasting and muddier flavour in the cup.

Grade 1 coffees aren’t flawless, but the overall quality, consistency, and clarity of flavour is on another level.

Darker roasts can sometimes mask these defects. That’s why a lot of cheaper coffees taste more ‘roasty’ than expressive.

That’s not our style.

We roast to showcase the coffee, not disguise it.

And that’s why we pay the extra $5+ per kilo for better green coffee. That’s why our coffee can cost more than other roasters. Because for us, if it’s not good quality, it’s not worth it.

We’re fortunate to roast most of our coffee samples in-house. It allows us to cup each coffee at the most desired age post-roast.

It also gives us valuable insight into how sample roasts can be adapted and refined for larger everyday production batches.
