What do you do on a cold Sunday afternoon, well you fire up the Ozpig and fire pit and get Misses GNOME to cook one of her amazing Goat Goulash’s and self saucing puddings. We had to invite our next door neighbours over to help us with devouring the goodness.

Well it’s been a while since I’ve had some time to do some cooking.
First on the list was 6kg’s of Smoked Garlic Paste and some Smoked Tallow.
Then the fun begins with some amazing Bindaree beef ribs from my awesome butcher Granville Butchery-QLD, and a Brahman Hump, they were both injected and rubbed and left in the fridge overnight . The injection was normal Coke, beef stock and Polly’s Black Sauce and rubbed with Morgo's Rubs new TEX-SPG and all this was cooked on the Trimal and ZGrills 700E-XL using a combination of Sambafireandbbq hickory and oak pellets

The Truth About MSG!

What actually is it?
Is it actually bad for you?

Did you know in 1968 a letter was written to the editor of the New England Journal of Medicine that has single handedly created a string of false information about MSG. Dr Kwok reported he was experiencing an array of strange symptoms after eating at a local Chinese restaurant and narrowed the culprit down to a few guesses. One being MSG. He asked at the end of his letter if any other doctors had felt similar side effects to any of the ingredients he listed.
The NEJM published it with the title “Chinese Restaurant Syndrome” and thus, the myth was born.

After decades of scientific research, there has been 0 correlation between MSG and the side effects it’s tarnished with having.

The facts:

MSG is naturally occurring. It’s found in tomatoes, Parmesan, mushrooms, and a lot of fermented foods.

“It’s jam packed full of sodium”
False. It actually has about 2/3rds less sodium than table salt.

MSG is the king of umami and I highly suggest keeping some in your pantry!

I know I’ve been slack lately doing cooks. But when your amazing butcher (Granville Butchery-QLD) gives you an unbelievable Tomahawk and the awesome Morgo's Rubs has an incredible new rub out well I have to do a cook. I slow cooked the tomahawk until rare on my sensational Trimal from Z Grills Australia using Sambafireandbbq pellets. Was sliced very easy with my custom Corowa bush furniture knife on there brisket board. Words cannot express how good this flavour and tenderness was. The tender juicy tomahawk was topped with a mushroom, capsicum, onion and garlic sauce and purée vegetables. Bloody sensational
