This dish is currently available as an add on to our set menus, quickly becoming a favourite.

We brine Japanese scallops in a mixture of saké, salt and mirin, lightly torched, they are served with a celeriac & apple remoulade, black garlic puree and topped with a warm mousse of foie gras & fino sherry

Assam tea leaves give this ice cream a deep, spiced caramel flavour, which pairs perfectly with the sticky, toasted marshmallow and a sharp blood orange oleo.
We peel, dry and fry milk skins from the tea base to add texture and crunch.
