Most people blame their coffee maker when the real culprit is sitting right in the bag.

That $12 grocery store coffee has likely been sitting in a warehouse for 6 months before it ever hit your shelf.

By the time it reaches your cup, the flavor compounds have already broken down, the oils have gone stale, and no amount of technique or equipment will save it.

Here's what actually happens after coffee is roasted:

Freshly roasted beans release CO2 for about 2 weeks, which is peak flavor.

After 30 days, oxidation kicks in and the complexity starts fading. After 3 months, what you're tasting is mostly bitterness with very little of the origin characteristics the roaster intended.

Your grinder, your pour over, your machine, none of it matters if the beans are past their window. A $30 burr grinder with fresh beans will outperform a $500 setup with stale ones every single time.

The fix is simple: buy smaller batches, check the roast date (not the expiration date), and aim to use your beans within 3 to 4 weeks of that date.
