Meet the Team: Mohit
Hi, I’m Mohit, the chef trusted with the curries, sauces, and foundations of our Asian kitchen at Salted Egg Darwin. I grew up in Mumbai, where I began my culinary journey and worked with Marriott Mumbai, before studying culinary arts at Le Cordon Bleu in Adelaide. Today, I call Darwin home, learning every day under Head Chef Mark Langat’s bold, flavour-driven approach.
What matters most to me is cooking with respect—letting Top End seafood, tropical produce, and Southeast Asian spices shine, not forcing them. I love the rhythm of service, the fire of the wok, and the feeling when a sauce quietly ties the whole table together.
When I’m not on the stove, you’ll usually find me at the markets, talking to growers and fishers, looking for what’s best that day and thinking about how to honour it in the next pot. For me, cooking isn’t just a job—it’s a daily promise to respect the ingredients, the people who grew or caught them, and every guest who trusts us with their appetite.
