When we first started sending everyone home with a Polaroid, I hoped they would mean as much to you as they do to me.

All these years later, I hear stories of them being collected, added to fridges, tucked into phone cases and carried around in wallets. I love thinking about all these little photos floating around out there, each one with the same graffiti background and a memory attached.

Three work friends who meet at Joy each March. They keep their Polaroids on the office fridge, even though only one of them still works there. Tonight we looked back over past menu photos while I plated, and I shared the small menu changes others might not notice- Victorian lamb instead of Tassie, and Okinawa brown sugar in the chestnut caramel.

Chawanmushi has been on our menu in some iteration since day one- seven years now. The flavours change with the seasons, or sometimes just my mood.

What stays the same is the perfectly hand-crafted bowl it’s served in, the silky custard interrupted by crunchy pops of quinoa, and that gentle smokiness that makes it feel like a warm hug.

If you sit at my kitchen counter, I can promise you one thing: you’re getting a chawanmushi.

In 2025, we served approximately 2,384 of you. Some of you were first-timers, some of you made a reservation with us every month, and some of you grabbed a cancellation every time we posted one. You came with friends, on dates, for your first night out without the kids, and so many of you came solo, too.

2025 was a tough year personally. We had to reschedule many guests while my partner was going through chemotherapy, and you all met that time with so much support and love. It was a constant reminder of how special the community we’ve built is and how much I truly love doing what I do. Yes, I am a chef-and I’ve been one for 15 years-but it has never felt as meaningful as it did in 2025.

Thank you to every single guest who sat at my kitchen counter and let me share my passion with you. It’s an exchange I’ll never take for granted and one I hope to continue for many years to come.

Welcome, 2026. I can’t wait to keep feeding you all.

I think everyone should make an effort to tell a service staff that they’re doing a good job. Even if the experience isn’t perfect, even if you saw them struggle a bit- the chances are they’re really trying and working really hard too. Your message, or comment will make their day, I promise.
