CYRIL HENSCHKE 🍷

While Henschke is best known for some of Australia's most celebrated Shiraz wines, Cyril Henschke reminds us that the family has also mastered another great variety, Cabernet Sauvignon.

Named in honour of fourth-generation winemaker Cyril Henschke, this single-vineyard Cabernet Sauvignon is sourced from the family's Eden Valley estate, where the vines were first planted in the late 1960s. First released as a single-vineyard wine in 1978, it has become one of Australia's benchmark Cabernet Sauvignons.

Produced from organically and biodynamically managed vineyards, Cyril Henschke is revered for its elegance, structure and remarkable longevity. A wine built not only for immediate enjoyment, but for decades of cellaring.

We're incredibly grateful to have received an annual allocation of this exceptional wine and are proud to offer it as part of our collection.

After countless requests, our Cape Grim Beef Short Ribs have returned, and this time, they're here to stay.

Behind every dish at Emerge is a network of producers and suppliers we deeply believe in, and one of those long-standing partnerships is with WesEggs 🥚

While we might not be serving up visible egg dishes on breakfast plates, eggs play a huge role behind the scenes in our kitchen. From baking and crumbing to preparation, quality eggs are part of the foundation of so much we do.

For us, using free-range eggs isn’t a decision; it’s simply the standard. We wouldn’t use anything else. Knowing where our produce comes from and how it’s produced is incredibly important to us, and that’s why partnerships like this matter.

Over the years, Wes Eggs faced challenge after challenge, from COVID disruptions to the devastating impacts of avian influenza. Yet they’ve continued to show resilience, consistency, and genuine care for what they produce. That kind of dedication matters to us.

This gives our guests the rare opportunity to experience one of Henschke's most captivating single-vineyard Shiraz wines without committing to a full bottle.

First released to commemorate 150 years of Henschke family winemaking, The Wheelwright pays tribute to founder Johann Christian Henschke, who arrived in the Eden Valley as a skilled wheelwright and stonemason before establishing the family winery in 1868.

Produced from old-vine Shiraz grown in the cool, elevated Eden Valley and managed under organic and biodynamic practices, The Wheelwright is a beautifully poised expression of the region. Elegant, refined and incredibly detailed, it showcases a style of Shiraz that is as much about finesse as it is power.
