Every tasting menu begins with two nostalgic street-food inspired bites.

First up: our cheeseburger spring roll, filled with dry-aged Wagyu brisket, ketchup, mustard, pickles and gloriously melty cheese.

Then, our signature prawn toast. Hand-chopped Gold Coast prawns on classic white bread, coated in sesame, fried in clarified butter and finished with yuzu mayo.

100+ years of family farming in a single dish. We took the Moffat Family’s exceptional Scenic Rim carrots and gave them the ultimate glow-up: slow-braised in sticky char siu sauce, charred over charcoal, and paired with a carrot-hoisin reduction, charred leek purée, and a vibrant carrot top oil.

Inspired by Electromagnetic Brainology, this dish explores the universe’s four afflictions through foot, wing, parson’s nose and comb, each prepared with intention, technique and a little rebellion.

Sourced from Chicken Wonders (Wong family) and raised slowly on pasture through Aurum Poultry, every element is a nod to tradition, transformed. Expect braised-then-crisp foot, a stuffed wing with native five spice, golden fried parson’s, and a delicate, buttery comb on brioche.
