Dave from is back with us for another one… and this time we’re going full Dark M**o mode. 🔥
We’re hosting a hands-on masterclass all about the art of salting, curing and making proper salumi (charcuterie). You’ll learn the process, get your hands dirty, and make your own pancetta, coppa and salami to take through the curing journey yourself.
While all that’s happening, the kitchen will be running a 6-course long lunch featuring local Tassie produce, cooked by our head chef .vbro alongside .
French techniques. Japanese influence. Fire, smoke, fat, fermentation and all the good things winter should taste like.
Honestly… the dishes the boys are putting together look ridiculous.
We’re opening this up to our followers first before official tickets go live early next week.
