Exciting news!!!!!!

Dave from is back with us for another one… and this time we’re going full Dark M**o mode. 🔥

We’re hosting a hands-on masterclass all about the art of salting, curing and making proper salumi (charcuterie). You’ll learn the process, get your hands dirty, and make your own pancetta, coppa and salami to take through the curing journey yourself.

While all that’s happening, the kitchen will be running a 6-course long lunch featuring local Tassie produce, cooked by our head chef .vbro alongside .

French techniques. Japanese influence. Fire, smoke, fat, fermentation and all the good things winter should taste like.

Honestly… the dishes the boys are putting together look ridiculous.

We’re opening this up to our followers first before official tickets go live early next week.

A lot of people spending their whole life look for hobbies or something to fill their time.

We’re lucky enough for these moments. Before one day they stop asking to hang out, we’re here everyday, building these memories, inspiring this little person, quality control starts early around here.

Training nights at Lobby feel a little different.
No rush, no pressure… just us, gathered around open up to each other.

We talk, we show, we try, where we swap roles, sharing what we know, what we’ve learned, and sometimes what we’re still figuring out.

It’s not about being perfect,
it’s about understanding each other a little more and experience quietly passes from one to another.

Because at Lobby, getting better isn’t a solo thing…
we grow together 🔥
