Three Generations - One Kitchen
My grandmother taught my mother to cook. My mother taught me.
I still remember my grandma's sweet mung bean cakes (chè kho), topped with roasted sesame seeds, made every Tết, the kind of food that stays with you long after the festive season is over.
Three generations, one kitchen - just spread across a few decades and two countries.
These days we still cook chả cá from the same family recipe. A family marinade of fresh galangal, turmeric, onion, garlic, pepper, prawn paste, a little sugar and fish sauce, it's what makes chả cá one of the most loved dishes on our menu.
Our chef wok-chars the marinated fish (we use Australian Ling fillet) with dill and shallot until the edges catch and char, then serves it with garden herbs, vermicelli, peanut and nước mắm.
When you eat at Hanoi on Manning, you're eating from that line.

We’re excited to share that Hanoi on Mannings menus have been updated!

We now clearly mark gluten-free (GF) dishes to make it easier for guests with dietary needs to choose safely and enjoy with confidence.

In addition, our menus now include clearer information about our seafood origin indicating whether dishes are prepared with imported seafood, mixed seafood, or Australian seafood, so you know exactly what you’re enjoying.

Bun Cha - my all-time favourite.
Sundays at our house, in Hanoi when I was young, often smelled of grilled pork.
My mum used to make this almost every weekend. I learnt as a child, sorting the herbs first, then mincing the pork, then the marinade. Now I could make it with my eyes closed.
These days, I make this dish at Hanoi on Manning, too. But my version is a little different: thin slices of pork belly, marinated in fish sauce, shallot, five spice, cracked pepper, and a touch of sugar. My small secret is a spoon of Asian-style BBQ sauce in the marinade.
The trick is the meat, pork belly with the right ribbon of fat through it. Fifteen minutes in the marinade. Wok - charred until the edges catch and smoke.
Then rice vermicelli, lettuce, mints, Vietnamese hot mint, perilla, coriander, basil. Dipping sauce of fish sauce, lime, brown sugar, garlic, chilli.
My son still prefers his with rice. Fair enough.

My very first memory of food is my mother's caramelised pork belly, one summer afternoon in Hanoi when I was about three. Glossy strips in a big white bowl, spring onion and coriander, a few slices of red chilli. Salty, sweet, a little spice. I can taste it still.
My mother could cook a whole week of different pork dinners, then cook the same dishes again the next week in a new order, so we never grew tired of them. I learned to cook from her.
I still cook the same way today — here in Kiama, for you. The version I serve at Hanoi on Manning is still hers, with a small turn of my own. Thirty years in Australia have to show up somewhere. Same heart, slightly different hand.
