❤️ Homemade Beef Dim Sims ❤️
In this batch, we made 3,800 dim sims, made with 25% lamb leg meat. Our initial idea was to create pure lamb dim sims, but due to the high cost of lamb and the need to keep our prices affordable, we decided to blend the lamb with the beef instead.
Hubby begins by carefully mincing the beef and lamb in his custom-built mincer/mixer.
He then chops up fresh cabbages he had personally selected from Mr. Young's Vegie Shed - Launceston, supporting local farmers.
All the ingredients, minced meats, cabbages, seasonings and flour are combined and mixed in his mixer for at least 30 minutes to craft our flavorful dim sim filling.
Finally, Hubby and I dedicate 2 full days/nights into handmaking these dim sims pouring our care and passion into each one, steaming them gently until perfectly cooked.
