Chef Joe Ditri brings the Southern Forests to the plate, combining creativity in the kitchen with a deep connection to the region he has longstanding family ties to.

Originally from Northcliffe, Joe moved to Perth and spent 16 years as a chef at Fraser’s Restaurant in Kings Park, earning two gold medals at the Restaurant of Champions and the title of Western Australian Young Chef of the Year in 2006. He then spent three years as head chef at Brika’s Restaurant before returning to Manjimup to be closer to family and the fresh, local produce that first inspired his culinary journey.

A qualified chef with a flair for creativity, Joe first made his mark locally with Two Little Black Birds café, where his inspired menus featuring premium regional ingredients quickly built a loyal following. Today, he is also the driving force behind Jersey Burgers, serving up juicy, flavour-packed burgers that highlight the very best of the Southern Forests.

Beyond his day-to-day kitchen work, Joe is a sought-after event caterer, celebrated for menus that capture the taste and spirit of the Southern Forests, including his much-loved paella, a vibrant showpiece of regional flavours.
