It's a blessing to have year-round supply of velvety white oyster mushrooms grown by local producer The Dairyman Barossa. With a nutty flavour and a sweetness likened to anise, they add an subtle earthiness to dishes across the menu. Chef Joel gets the goods here from the legend himself, Michael Wohlstadt.

Delivering a fresh taste of the sea, an Alborohs Island scallop is perfectly balanced with Illawarra plum XO and fragrant lemongrass broth. Succulent, tart and spicy, all the good things.
