Sandor is a local talent, a friend of staġuni, and someone whose cooking truly speaks for itself. So we’re letting him do exactly that — he’ll be sharing a peek at his menu very soon.

““I’m a chef and food grower whose hands are equally at home in the soil where it begins and in the kitchen. Thirteen years as chef and garden manager at Rockford’s Stonewall dining room gave me a deep sense of the importance of place — that what grows here, in this valley, in this season, is the only honest starting point for what ends up on the plate.

My cooking is built on sound technique and a simple belief: that food should deepen experience, not simply accompany it. Ingredients are sourced from community producers and grown in my own garden where possible, moving directly from soil to plate - honest, considered, and of their place.

It’s a sensibility I recognise immediately in staguni, Clare Falzon’s much lauded Marananga schoolhouse dining room is shaped by her Maltese heritage and time in celebrated kitchens here and abroad.
