We are delighted to welcome to Florentino for a special wine dinner on Thursday 13 August, celebrating one of Australia’s most historic and iconic wineries.

Hosted in the Wynn Room at Florentino, named after Samuel Wynn who purchased the winery in 1951, the evening will bring together the shared heritage of Florentino and Wynns Coonawarra Estate in a truly unique setting.

In the presence of Wynns Winemaker Chris Plummer, enjoy a rare opportunity to taste the estate's most celebrated cuvées alongside exceptional back vintages that showcase the remarkable ageability and evolution of Wynns wines over time.

Guests will also enjoy a specially curated menu by Florentino Executive Chef Brendan Katich, designed to complement the elegance and structure of the wines.

Gorgonzola Dolce, Pear & Walnut Torta, Sweet Vermouth

Gorgonzola Dolce, a DOP blue cheese from Lombardia, is soft, creamy and delicately sweet, with a gentle blue veining and a texture that borders on spoonable. Made from cow’s milk and aged for a minimum of 50 days, it offers a milder, more rounded and almost sweet flavour profile.

We serve it with a pear and fennel purée, fresh Otway walnuts, and a pear and walnut torta glazed in sweet vermouth.
