Two weeks of work before it reaches the plate.⁠

Whole Victorian duck, butchered in house. Crown brined overnight in shaoxing wine, cassia, star anise and black cardamom. Blanched in maltose and coconut vinegar, then hung to dry age for 14 days.⁠

Between the skin and meat, longganisa (Filipino sausage) mix that’s flavoured with heaps of garlic, caramelised onion, black pepper, paprika and a touch of chilli.⁠
