The design was a collaboration between Ryan Taylor, Nathan Ramsay and Andrew Bock. The main drawcard though is the pizza. utilizing the same artisan techniques used at Tanglewood Sourdough Bakery. El Capitano Pizzas are made using ACO certified organic flour and a 72hour fermentation. The slow natural leavening gives the dough its unique flavour and makes the crumb slightly chewy and sweet. The slow ferment breaks down the acetic and phytic acid in the grain making this sourdough pizza better for digestion. Ingredients are locally sourced and fresh. The local growers and producers at the Noosa farmers markets feature heavily on the menu. El Capitano offers dine in and takeaway pizza. Soon offering pizza delivery for Noosa Heads, Noosa Junction and Noosa River. The menu offers gluten free pizza made in house, salads, antipasti and dessert. The drinks list features cocktails, craft beers, boutique wines, whiskeys, rums and tequila. The Kraken artwork wrestling the tall ship will captivate your imagination while you wait for your pizza.
