Good coffee shouldn't be hard to find.

We have a nice little collection of cafés that care as much about what's in the cup as we do.

Colombia has a way of producing coffee that's hard to look past.

The geography does a lot of the work for the bean.

Diverse microclimates, high altitudes and farming families that have been perfecting their craft across generations.

But what keeps us coming back is the range.

No two Colombian coffees taste the same, and that's exactly what makes them so compelling to work with.

Bright, complex, endlessly expressive.

Colombia consistently produces some of the most interesting coffee we get our hands on, and we don't take that lightly when it comes to the roaster.

Our current Single Origin Espresso on rotation is representing Costa Rica & comes from Ivan Solis' family-run micro mill in Los Santos, one of the most respected coffee-producing regions in the country.

Sitting at 2000 metres above sea level, the elevation and nutrient-rich soil do a lot of the heavy lifting before the coffee even reaches us.

What makes this one stand out is the anaerobic fermentation process.

It's a deliberate, time-intensive method that draws out extra sweetness and body that's reflected in the cup.

Toffee, jammy plum, and stone fruit.

Rich, complex and roasted for espresso.

This is the kind of coffee that makes you slow down and appreciate the flavours.

Available now via the link in bio, but not forever ☕

Good roasting sits somewhere between craft and science.

Understanding how a bean behaves under heat, what water chemistry does to extraction, and how a roast holds up through milk.

These are the details that separate a cup of coffee from a considered one.

It's what we've always focused on at Latitude ☕

Roasting coffee is equal parts science and instinct.

Temperature curves, development time, airflow; every variable is monitored, adjusted, and considered in real time.

Push too hard and you lose the delicate notes that made that coffee worth sourcing in the first place.

Pull back too early and you leave potential in the drum.

At Latitude, every roast profile is built specifically around the bean in front of us.

Not a template, or a shortcut.

Just a process that respects the coffee for what it is.

This is what that looks like.

Part of what makes specialty coffee so endlessly fascinating is that no two origins taste the same.

Different soils, different climates, and different processing methods.

The variation is extraordinary, and we think you should get to experience as much of it as possible.

That's why our single origin bags aren't permanent fixtures.

Each one is available for a limited time, giving us the space to continually explore what's out there, and giving you the chance to taste the full spectrum of what coffee can actually be.

Think of it less like a rotating menu and more like a guided journey.

Each origin we bring in has been carefully selected, cupped, and profiled before it ever reaches you.

When that lot comes to an end, something equally considered takes its place.

A different country, different process, and a different story in your cup.

It's our way of keeping things honest, curious, and always moving forward.

Because coffee is one of the most complex and diverse ingredients on the planet, and we've only just scratched the surface.
