Breakdown of an Anaerobic Thermal Shock Washed Sidra. πŸ‡¨πŸ‡΄βœ¨

Fresh off the roaster, this Colombia El Diviso is one of Chris’ personal favorites right now. Produced by the Lasso Brothers this Sidra variety is a hybrid of Geisha and an Ethiopian landrace, bringing incredibly light, delicate, and floral notes to the cup.

Here is exactly why the processing makes it so special:
πŸ’§ Anaerobic: Cherries are fermented in submerged tanks with zero oxygen.
πŸ”₯ Thermal Shock: The cherries are then hit with a hot or cold water shock to change the cell structure, massively elevating the complexity and mouthfeel.
✨ Washed: Finished as a washed process to keep the final cup crisp and clean.

Before any batch makes it into a Passport bag, it goes through our final sorting process. Even the highest quality green coffee needs a sharp eye to catch the stragglers. Here is what we are hunting for on the tray:

We are pulling out any beans that didn't roast evenly or develop their full potential. Leaving them in means risking bitter, ashy, or flat notes in your final brew. By removing them by hand, we guarantee every bag of Passport delivers that sweet, high clarity profile you expect. β˜•οΈβœ¨

Decaf used to be dominated by savory, umami notes where the processing completely masked the coffee. Now, the process is so subtle that the actual variety shines first.

Because the quality has skyrocketed, we treat our decaf menu just like our regular rotation. We currently have 3 decafs dialled in for milk on the espresso bar, plus up to 4 decaf options on the reserve filter menu.

Historically, producers used their lowest quality beans for decaf. Not anymore.

Today, we are seeing premium, high-scoring varieties - like Pink Bourbon from PeΓ±as Blancas - getting the decaf treatment. We treat our decaf lineup with the exact same respect as our best single origins, and the results speak for themselves.

You are definitely noticing the shift. Demand has completely skyrocketed, with our decaf drinkers skipping the 250g and upgrading straight to 1kg bags!

Colombia is doing a lot of the heavy lifting across our menu right now - ranging from clean, elegant washed profiles to some seriously expressive thermal shocks. But we’ve also got a few wildcards on the bar.

Here is what we are pouring and packing:
πŸ‡¨πŸ‡΄ Finca Alta Gracia (Gesha): Hitting with notes of cooked mango, toffee, lemon tea, and golden raisin.

πŸ‡¨πŸ‡΄ Finca Resinas "Pink Borbon Creation": A delicate double anaerobic washed profile packed with candied florals.

πŸ‡ΊπŸ‡¬ Uganda Mubuku (SL14): This anaerobic natural is boozy, vibrant, and fruit-forward with tropical fruit, berry jam, and cocoa nib.

πŸŒ™ El Diviso EA Decaf: A thermal shock anaerobic natural. Silky, sweet, and pushing notes of strawberry, cherry, and florals. A perfect reminder that decaf can be incredibly expressive.

Our site traffic comes down to two things: word of mouth and uncompromising quality.

It all kicked off during the Easter 2020 lockdowns. When our physical doors closed right before a major release, the community flooded online and built our digital presence overnight.

Six years later, regulars from that exact week still order every single week - some without ever stepping foot inside our roastery!

Moving forward, we are doubling down on the website with more transparency and fresh blog content. Thank you for being part of the journey.

What started as a basic ordering page in our back shed is now a nationwide operation. Today, the website archives every rotating single origin we release and dispatches fresh coffee across the country.

Even with green bean costs spiking recently, we absolutely refused to drop our standards. You clearly noticed - we just hit a massive 107% year-over-year online growth! Thank you for backing us.
