Sometimes we’re asked why our croissants aren’t as big or uniform as others.
A big part of that comes down to what’s in the dough.
Many bakeries use bread improvers. These are blends of ingredients designed to:
• increase volume
• improve consistency
• speed up production
• strengthen dough
They often include things like emulsifiers, enzymes and additives (sometimes listed as E numbers rather than names).
They do a job, and they’re widely used.
We’ve chosen not to use them.
Instead, we rely on:
• time
• fermentation
• good butter
• freshly milled flour
It means our croissants can be a little less uniform.
Sometimes a bit smaller.
Sometimes a bit wilder.
But they’re made from a short list of ingredients we know and trust and exactly why we think the are the best😊🥐

You’ll have to forgive us if we are all sad this week because tomorrow is last shift at M&B🥺

If you’ve visited the cafe in the last year there’s a high chance you’ve crossed paths with Lily.
She has poured her heart into M&B, always greeting customers with a smile, amazing at leading the cafe on our busiest days and even consistently showing up to lead our run club even on her days off!
Her kind, caring, bubbly personality is infectious and she will be massively missed by everyone.

We wish her the best of luck with her speech pathology masters degree! Thank you for choosing to spend your time in Perth with us! And just remember Lils you’ll always have a home here at M&B🫶🏼🫶🏼

Miller + Baker is hiring front of house staff, across various roles and experience levels.
We’re a busy family-run bakery cafe, open 7 days a week. Less than a 20 minute walk from Perth train or bus stations.

We’re looking for people who are reliable, kind and take pride in their work. Our best front of house staff notice the small details that make a difference to our customers, look out for their team and are happy to work hard. Front of house shifts start early, from 6am. We all pitch in to support each other, and you’ll be involved in all aspects of the cafe - food service, customer service, delivery (if you have your drivers license!) dishwashing, cleaning, unpacking stock, taking out rubbish.

- Junior - No experience necessary. Weekend and school holiday shifts
- Casual Barista - Fast-paced coffee experience 2+ years.
- Cafe Manager - Experience leading a team, running a busy service, and maintaining strong systems and standards. Bakery experience would be a plus! Full Time role

For our Cafe manager role, we’re looking for someone who takes pride in building a strong team, running a tight service, and contributing to the next stage of our business. As part of the management team you’ll work closely with the owners and have genuine input into how the cafe operates.

PUBLIC HOLIDAY HOURS ☕️🍞

We’re open this Labour Day (Lake Street Only 🚨)! Monday 2nd March from 7am–1pm with reduced trading hours for the public holiday.

The full range will be flowing as usual, specialty coffee, fresh sandwiches, pastries and all your favourite breads.

A friendly reminder that as a small, family-run bakery everything is made by hand and we have limited daily capacity. On busy public holidays we do sell out so please get in early to avoid disappointment.

As always, please place pre-orders 2 days in advance (before 12pm) to secure your favourites and avoid missing out.

The Sunday Roast had its moment… but you asked (a lot), so we listened 👀

Say hello again to the Beef Chimmichimmi Bang Bang (oh we do love you).

Slow roasted beef, homemade chimichurri, aioli, fresh rocket + sweet caramelised onion, all loaded into a crusty baguette. It’s juicy, herby, messy in the best way… and worth every napkin.

Here’s a very belated wrap up of from November 2025! We meant to post straight away… and then December happened. Christmas. Panettone. Life. Anyway, here it is!

We began in Pomonal in the Grampians with a Welcome to Country from the Barengi Gadjin, Eastern Maar and Gunditj Mirring Traditional Owners.

The theme was Resilience. Honest conversations about staying financially viable while holding onto your values and bakers, brewers and farmers sharing generously.
Delicious food, and some very strong t-shirt energy.

We learnt why rye matters from food systems anthropologist Laura Valli and tasted sweet and savoury rye bakes.

Down the road to where owner Nick shared his experience and trials baking wild leavened whole flour bread.

Day two took us to . Heritage and landrace crops in the paddock and biodynamic practices in action. A reminder that there’s strength in diversity.

Wrapping up and still on the theme of Resilience, we stood inside the vast, cathedral-like Stick Shed in Murtoa. One of several emergency grain stores built during WW2. It was unlike anything we’d seen before.

Before flying home, by pure luck, we made it to the opening of .au in Abbotsford. Warm, welcoming and unassuming just like its owners Pippa and Michael James. The sweet and savoury bakes were, of course, absolutely delicious.

🌾 Grainz 2025 was organised by a small, hardworking and gracious volunteer committee who gave generous space to every speaker and ensured we all left feeling nourished in body and spirit.
