My very LAST masterpiece! ✨
as a sculpted cake, 300 coffee portions for their 50th anniversary.

The cake makers here will understand what a challenge it was… coz we hate making square cakes 😝
I chose to make x4 kind of cubes, each one sculpted, and they had to match perfectly, be perfectly straight, and sized to the millimetre to match the scale dimensions and outside design.

It took me weeks to create a plan and work on it, from a partial blueprint, to whatever I could get from Google Maps, plus on-site measurements and photos.

While the structure had to be strong, I chose not to deliver it in one piece, but to keep the upper “tier” aside to make sure the whole thing wouldn’t crack while driving down to the loading dock and over all the bumps. This meant that only on site, in the lobby of the tower, I had to finish the cake… in front of everyone leaving work from the 27 floors 🫣 (if you know the feeling, you know).

There, with the assistance of a girlfriend, I added the last details (which was still a lot!).
I chose to cut my painted icing sheets on site to make sure the dimensions were right once adding the last cake, as my brain was too fried 🤯 after the crazy week I’d had (17 hours of work the day before and only 3 hours of sleep). And everything was right! 😎
Just not my timing… 🙄 my time management and I clearly have an ongoing toxic relationship.

Luckily, I have plenty of other skills 😁 like the ability to provide a “live cake construction show” as entertainment for the guests after I’d passed the due time 😅

Everything turned out well, I stayed longer to help with the cake cutting (it was delicious 😜) and enjoyed a glass 🥂 as I also had something to celebrate: myself 👑

Yes, you read that right!
Last week, I delivered my last cake, an amazing project I had been working on for months.

You might have noticed that I haven’t posted many cakes this year… well, life took me in another direction.
I’ve been in a transition phase for about a year. The rise in ingredient prices while budgets were going down was the first thing that hit me hard. That’s when I decided that instead of reducing the quality of my work by using cheaper chocolate, I would simply reduce production if a job opportunity ever came my way. And only a couple of weeks later, it happened : I was offered a job in an ice cream shop, making their incredible recipes. I didn’t have to chase cake orders anymore and I genuinely enjoyed working for someone else again (way less stressful). I even started giving away my cake enquiries, only keeping the croquembouches.

But while I was in France this winter, the shop closed down 😧I lost my part-time job and had to decide whether to fully return to my cake business or look for a new job. I chose the second option (I might explain my decision later in another post).

However, while in France, a previous customer, Tamara from reached out with an amazing cake challenge… and I said yes!
That project became my very last cake: recreating the building 140 St Georges Terrace for their 50th anniversary, 300 coffee portions.

I know it’s been a while since I’ve posted, yet I have some gorgeous creations waiting to get public 😊

Wow, it’s been over a week without posting anything, not sure this ever happened, but I was in such a crazy period, and not even because of cakes.

So yesterday I had to give back the keys of the house in which I lived for 7 years. I’ve spent over a month hunting for a new home, going to several inspections per day (along with 70 other people each time), applying for houses I didn’t even want to live in…
Only this Wednesday when I was at the peak of my stress capacity, one of my applications been approved 😮‍💨 only because I’ve added an extra tenant on it and offered $10 more 🙄
This house won’t be available before another month so on Thursday I had a storage company taking my belongings for this time.
I am now on a “temporary break” and won’t take orders neither teach before march.

Once my body and mind recover from this intense week, I will finally go through my emails. If not available, I will recommend other bakers to you.

Thanks to the people who tried to help me in finding something 🙏
Also, I will be in the same area : moving to Innaloo at the end of February.

I’ve received many great feedbacks about my galettes de rois, even heard they are the best in Perth, and this touches me deeply as I am self taught and not a professional pastry chef 🫶🏻 so thank you from the bottom of my heart to everyone who commented on them, send me a message, recommended them to friends, leave a review…you are amazing!

If you are wondering what make them look and taste so go, beside the almond filling and skills (you can learn in my online course 😜), you might want to know that I use the high quality puff pastry from (you can find their stockist list on their website). Give it a try in your next home made galette, tart, pie, or if you own a business who use puff pastry and want to support another local business ❤️

Starting the year with this challenging one 🤯
I don’t know if it looks simple to you but it wasn’t 😅
I am used to cars, and trucks, and made a motor bike one, but tractor vector spreader was a first.
Even tho I’ve learned to drive and use an older model when I was working in a farm as a backpacker 9 years ago, I couldn’t remember the details 😅
It took me a while to figure out the proper shape and body parts. I realized that it is much easier to find blueprints and different views online when it comes to a car, which I usually print. This time I had to draw what I figured out myself.
Here I’ve ended up finding and watching videos made from a drone for my brain to grab some proportions and shapes.
I’ve decided to go minimalist style as I couldn’t get some of the details, but added cool lights to finish it with style :)

This was a gift from the bride to the groom on their wedding day (not as a wedding cake) but a way to include his favorite toy in their big day 😊
