🐟 Honey Garlic Golden Trevally with Coconut Ginger Rice 🥥🍚
For the Fish:
• 500g Golden Trevally
• 3 tbsp honey
• 2 tsp minced garlic
• 2 tbsp soy sauce
• 2 tsp lime juice
• 1 tsp cracked black pepper
• 2 tbsp olive oil
• 2 tbsp chopped spring onions
• fresh Chilli
For the Rice:
• 1½ cups jasmine rice
• 270ml coconut milk
• ⅔ cup water
• 2 tsp finely grated fresh ginger
• Salt to taste
METHOD
1️⃣ Mix honey, garlic, soy sauce, lime juice and pepper in a bowl.
2️⃣ Pat the fish dry. Heat oil in a non-stick pan over medium heat and cook fish for 1 minute on each side.
3️⃣ Pour over the sauce and cook for a further 2–3 minutes until reduced and sticky.
4️⃣ Garnish with spring onions and fresh chilli
🍚 For the rice:
Combine rice, coconut milk, water, ginger and a pinch of salt in a saucepan. Cover and bring to the boil. Reduce heat and cook for 10 minutes. Turn off the heat and leave covered for 5 minutes.
Serve the sticky Honey Garlic Golden Trevally over the fragrant Coconut Ginger Rice and enjoy 😋
