At Bacco, we buy whole fish and use every part with purpose.

The fillets become tonight’s special, while the bones, heads and trimmings are slowly transformed into rich stocks and sauces that form the foundation of many dishes coming out of our kitchen.

It’s a more traditional way of cooking , respecting the ingredient, reducing waste, and creating deeper flavour along the way.
