Stacey has three large format cuts on the menu now 🎉

It’s always been a dream of hers to own a restaurant where she can cook various cuts and would ya just look at her, she’s made her dreams come true. 🥰

We spend approx $1500 per week with JUST on BEEF, more when you add the - so about $2000 per week just in meat 😂🤪🤠

Gotta bring these dreams to life darl, and when Stacey has cooked over 300,000 steaks in her career and Pāora spent his younger years at Lone Star you gotta get the good beef for these kids in the kitchen 😉🤠

I always say never forget where you come from as these early years shape us into who we are today, let’s just all be happy I have minimal input with the menu otherwise you’d all be eating Dagwood dogs and mashed potato that were supposed to be chips because I grew up on the Showgrounds 🤣🤣

A cute little English lady said a few weeks ago:

We said not quite 😉
It’s from Oberon in NSW from but it’s just the Barnsley style cut. It’s surprising how many people don’t know what it is, as Stacey has been cooking it for years, is obsessed with the Barnsley cut 🤠

Essentially it’s a double lamb chop from the saddle with the T-bone still in, you know Stacey, she loves cooking meat bone-in.
And the Margra lamb is something else, their primary use is to breed meat for eating and not a by-product of its wool like most Aussie lamb. It’s a sheep with hair not wool and is 100% pasture on green land just outside of Bathurst.

Currently served on an artichoke skordalia, cubeb pepper spiced, radicchio, sage.

Come get em this weekend, open normal hours.

Monday & Wednesday - Saturday 5pm to late & Saturday lunch from 12pm.

So many many guests often tell me they know how hard it is to own and run a restaurant which is refreshing to hear because a lot of people romanticize what it’s like 😂

“Oh it must be so great, you eat what you want, you travel all over the world, you meet all these amazing chefs or stars like Kevin Costner, and you work nights so must get to sleep in all day”.

No one sees the struggle, the long hours, the weeks you don’t pay yourself, the days you can’t function from being exhausted or the sacrifices you make to your personal life.

Why do we do it, What inspires us and keeps us motivated?

The most inspiring nights for me is when I meet people like Francesca or when we’ve changed someone’s life.
She turned 82 this week and it’s her first birthday without her husband so her children brought her up to Noosa for a holiday and they’ve been eating their way around Noosa for the “Festival of Francesca” 😆

Francesca and people like her are the exact reason we do what we do, there’s nothing more satisfying than making someone happy or bringing joy to their life, how good does it feel when someone makes you feel special?

She’s told me she’ll be back for her 92nd birthday and I can’t wait! 💪🏽💪🏽💪🏽
My favourite part was laughing with Francesca and watching her try to blow out the sparkler 🤪😉

Thank you to all the people who change our lives here at Humble, we’re richer for meeting all of you 🥰

FREE BABYSITTING 😂
These gorgeous little devils need a JUNIOR DISHY/KITCHEN HAND to work weekends. 🧼 🧽

Your shifts can be on a Friday or Saturday night consisting of a 5.30pm/6pm start and 9.30-10pm finish.
Weeknights are rare but are short shifts generally 5.30-8.30pm so this will suit a mature hardworking teenager that is flexible.

If you have a teenager or know a teenager that wants to start working in a small kitchen then please reach out or bring them in to say ‘Hi’.
Experience not necessary.
We find this role suits someone 15+, still at school and with the flexibility to work any nights we’re open (sporting commitments can always be worked around when required).

The old boy went out fishing this week 😉 and caught us girls some coral trout, line caught from up near Yeppoon and it’s just sensational.
On the menu tonight and maybe Friday but chances are we’ll sell out and then we get to choose more fresh, sustainable fish from whatever’s come in fresh overnight.

Turns out the old boy Dan still has it 😂

I don’t know what it’s like to be sitting on a boat hundreds of kilometers off the coast in water and watching the moon shine down on it but when Dan sends me photos and videos I definitely feel gratitude for the hard work of all fisherman but also a sense of how small we are in the scheme of things, we’re like a drop in the ocean. We’re really lucky to be able to serve this QLD wild caught fish in our restauant.

Absolutely loving this time of year for reef fish, John & Barb it’s time to come for the coral trout again. 😉🥰

A dessert which Stacey and Charlotte developed while she worked here. This is an epic dessert, weird some people say…..
Levi: “that’s weird, but like in the best way, it’s the best dessert I’ve ever eaten” 😂

He’s 100% correct, it’s like a hit of salty sesame mixed with a vanilla ice cream but then there’s a layer of cheesecake flavoured mousse and then they’ve gone and popped some poached quince on top!
You were all fooled by my last post about the sticky date pudding and all went hard on it Saturday night! Turns out the real winners were the tahini semifreddo eaters 😆
Some regulars walked up for takeaway sticky date last night 🙄🤪
Topped with cheesecake mousse and poached quince, a simple yet delicious and almost always the highlight dish when we ask.

To all our Saturday lunch & dinner guests, who are you? Where did you come from? And how is it we had a restaurant full of ‘certified vibes’? 😎😉

We are so lucky!

It’s Rosie’s birthday on Monday so if you’re hungry tomorrow night you better pop in for dinner and to sing her happy birthday. 🥳
Disclaimer: No you don’t know Rosie, shes not a waiter here 😂 she’s a regular from back in 2021 and has been coming here for the soups since our inception, partial to a glass of Rosé and is a pure delight to host, Humble is one of her favourite restaurants 💃🥰
