The ancient language of fire is introduced to the modern kitchen through the controlled use of wood fired ovens and grills, placing a heavy reliance on human instinct. Through this technique, Firedoor explores the relationship between food and fire, creating the ultimate flavour enhancer. The kitchen will burn a collection of different woods daily to create coals that will then be used to enhance

the natural characteristics of the ingredients. In this process, there is no temperature gauge with the act of cooking reduced to experience, patience and instinct, a reflection of the honesty of the food. Situated in the back streets of Surry Hills and housed within the former Silknit House, a 1911 heritage building on Mary Street, the urban space features an open kitchen that centres around two custom-made wood-fired ovens, four grills and an Australian-made Aga.
