For my butterscotch babes 🤎

This whipped butterscotch is everything you never knew you needed. I love using it to top cupcakes, cookies, cakes, muffins, cinnamon scrolls, or simply dolloped over a warm pudding.

You’ll need:
🤎 1 cup (220g) brown sugar
🤎 125g butter
🤎 ½ cup (125ml) thickened cream

Add the butter and brown sugar to a saucepan over medium heat until the butter has melted and the sugar has dissolved. Stir in the cream and simmer for 3–5 minutes, stirring constantly, until smooth and glossy.

Allow the butterscotch to cool completely, then whip with an electric mixer for 3–5 minutes until it’s light, fluffy, and frosting-like. You’re welcome!

One of the greatest things I ever did was learn to enjoy my own company.

As a teenager, I spent a lot of time on my own. At the time it felt lonely, but it was in those quiet moments that I discovered my love for baking and cake decorating a passion that’s shaped so much of my life.

I hear so many young girls worrying they’re missing out because their teenage years or twenties don’t look like the movies or social media. They experience fomo, feel behind, or think they’re doing life wrong.

But there is so much beauty in spending time alone. It’s where you learn what lights you up, what brings you peace, and who you are when no one else is around.

Your own company can become your greatest comfort, and getting to know yourself might just be one of the best relationships you’ll ever have. 🤍

One of the greatest gifts I ever gave myself was learning to enjoy my own company.

As a teenager, I spent a lot of time alone. At the time, it felt lonely. Looking back, it was where I found myself. It’s where I discovered my love for baking and cake decorating, and the beginning of a passion that completely changed my life.

I hear so many young women worry they’re missing out because their teenage years or twenties don’t look like the movies or social media. They feel behind, directionless, or like everyone else is living a more exciting life.

But there is so much beauty in slowing down and getting to know yourself. In finding hobbies that light you up, creating something with your own hands, and learning that your own company can be enough.

Sometimes the seasons that feel the loneliest become the ones you’re most grateful for, because they’re the seasons where you meet yourself. 🤍🍓

I’m falling in love with baking again. 🤍

After more than 15 years of decorating cakes and running Sassy full-time, I’ve found a new appreciation for creating.

These days, it’s less about deadlines and more about slowing down, trying new recipes, telling stories, and baking for the people I love.

Sassy is evolving, and so am I. It feels like I’ve come back to the reason I fell in love with baking in the first place. ✨

LANOLIPS ✌🏽 + body + face sent over their new Butterscotch Cookie and White Chocolate Raspberry lipgloss and, as I’ve said before, if something smells good enough to eat, I’m probably going to bake it.

🍪 Ingredients
* 150g unsalted butter, softened
* 70g caster sugar
* 150g brown sugar
* 1 egg
* 1 tbsp treacle
* 1 tsp vanilla extract
* 2 cups plain flour
* ½ tsp baking powder
* ½ tsp baking soda
* ½ tsp salt
* 150g white chocolate, chopped
* 100g macadamias, chopped
* 100g salted toffee shards

🍪 Method
1. Cream the butter and sugars until light and fluffy.
2. Beat in the egg, vanilla and treacle.
3. Mix in the flour, baking powder, baking soda and salt until just combined.
4. Fold through the white chocolate, macadamias and toffee shards.
5. Roll into large cookie dough balls and chill for at least 1 hour.
6. Bake at 180°C fan-forced for 12–14 minutes until golden around the edges.
7. Cool slightly, then top with whipped butterscotch and extra toffee pieces.

I made these for Dianne, my hairdresser since I was 12. She’s always there with a laugh, a chat, and somehow manages to make both my hair and my soul feel a little better.

A reminder that sometimes the people who brighten our lives aren’t always who you’d expect. 💛

This glorious golden baby disappeared in minutes. Buttery sweet shortcrust pastry, silky baked custard, and a glossy caramel glaze inspired by my favourite dessert of all time—crème caramel.

These Tim Tam lamingtons are part of my Baking for Loneliness series, a reminder that food can be a small act of care, whether it’s shared with someone you love, dropped off at a neighbour’s door, or enjoyed quietly on your own.
