Back in the mid-70s, Uncle Joe continued to explore the richness and variety of Malaysian cuisine. During Pasar Malam (night market), he discovered local dishes, local harvest, and other offerings. Everywhere he went, he was mesmerized by the delish cuisine, diverse culture, and distinct kindness. He found that preparing and enjoying food was more than a process, it was a communal affair that brought people together. During his stay in Ipoh, Uncle Joe made lots of local friends. This gave him the unique opportunity to learn their recipes and share their love for cooking with them. Knowing that this was something phenomenal, he documented everything in his diary. That diary was the magic behind Uncle Joe's cookings where he served hawker-style Australian food so friends and family could relish the tastes of Malaysia. Later, he gifted that diary to Gerald, his nephew, knowing he shared the same culinary curiosity and cooking expertise as he did. The Story of Gerald, our Head Chef
Today, Gerald, a professional chef, is making more magic by adding his natural flair and professional expertise to Uncle Joe’s recipes. With years of experience managing restaurant operations, a first-hand experience of cooking Malaysian cuisine, and access to Uncle Joe's authentic recipes, Gerald started ‘Uncle Joe’s Malaysian Kitchen.’
To make this project a success, Gerald researched the market, curated a list of most sought-after Malay dishes, tested, and perfected Uncle Joe’s recipes, and authenticated their marketability. He created a repeatable business process along with signature recipes, curated products, and individualized systems. With the branding and marketing dream team, Mabel and Chris, Gerald plans to initiate a franchising model so we can share the irresistible Malay cuisine with families all over Australia. Based on the original mid-70s' our diverse menu features authentic Malaysian Laksa, Beef Rendang, Char Kuey Teow, Sambal Nasi Goreng, Mee Goreng, Kwe Teow Siram, Sambal Eggplant with Rice, Hainanese Chicken Rice, Nasi Lemak, and lots more!
