Today many farms grow modern hybrid papayas bred for uniform shape and convenience. They often contain fewer seeds and are easier to handle, but they can lack the natural fragrance and character found in traditional varieties.

Kaek Daam Papaya (มะละกอแขกดำ) is an old heirloom variety traditionally used for our Som Dtum. Its firm flesh shreds into crisp strands that stay crunchy without turning mushy, with a naturally sweet flavour and a clean, signature fragrance.

We choose to grow Kaek Daam at and it becomes the foundation for more than seven varieties of our Som Dtum because it reflects the tradition of farmers who saved seeds and replanted them season after season. It may be less convenient, but it offers something far richer: heritage, fragrance, and the ability for seeds to be shared and grown again, keeping food traditions alive from one generation to the next.

Just for a few weeks, we’re cooking with organic bamboo shoots harvested from Boon Luck Farm. Grown with care, picked young, and delivered at their most vibrant.

Bamboo shoots have long been essential to Thai cuisine. Their gentle crunch balances heat, richness, and spice. From stir-fries to coconut curries, reminding us that Thai food has always celebrated what grows close to the land.

This season, they shine in 3 new dishes:
• Choo Chee Pork Soft Ribs – coconut cream curry with fresh bamboo shoots & makrut lime leaves
• Goong Padt Prik Leung – king prawns stir-fried with fresh bamboo shoots, yellow chilli, cumin leaf & holy basil
• Khao Rad Padt Prik Leung G*i – stir-fried fresh bamboo shoots, chicken, yellow chilli & holy basil, served with fried hen’s egg and rice

This Lunar New Year, we’re celebrating family, the enduring, far-reaching kind. Across Southeast Asia, Chinese migrants carried their recipes, techniques, and traditions with them, cooking with what they found and shaping new homes through food.

That’s why Thai food feels familiar, comforting, and somehow shared.

From five-spice stewed pork and egg in Thailand to Southern Chinese braises, from Kha Mhu to pork simmered in coconut water across Vietnam, and adobo from the Philippines. The flavours travel, adapt, and stay with us.

We’re cousins who grew up in different kitchens.

(Just like Amy, she thought she was Thai, turns out… very Chinese.)

This Lunar New Year, we honour those shared roots with our special Khanom Jeeb, made with minced chicken and prawn, topped with crab meat. Whether it’s called Khanom Jeeb in Thailand, Shumai, Siomai, or Soimay across Southeast Asia, the dumplings carried through generations and across borders.

On 16 February, we remember my mother Amy Chanta; her generosity, her spirit, and her unwavering belief in community.

Amy quietly supported many meaningful causes throughout her life, including the work of Buddharangsee Thai Community Language School, which continues to nurture young generations of Thai children in Sydney. Teaching them not only language, but also Thai cultural practices.

In her honour, Chat Thai is contributing support to help the community school continue its important work, assisting with learning materials for Thai Language Sunday Classes, supporting special cultural and educational projects, sustaining operational needs, and helping care for the volunteer teachers who give so much of themselves to the community.

It is our hope that this humble gesture helps the school continue the language and cultural support it brings to families and the wider community, something Amy deeply cared about.

Her kindness lives on in the people she cared about, and in the future she helped shape. Through the smiles of Soraya and Arthur, we see the next Thai/Australian generation Amy believed in: young Thai voices carrying forward language, culture, and community.

Today we celebrate Amy by sharing the proceeds from a Thai/Australian business she founded.

Chat Thai was created 31 years ago to serve as a meeting place for diners to socialise and chat about Thai food, and food in general. thus, Chat Thai.

Fast forward 31 years and we have added organic vegetables, herbs and fruit from our own Boon Luck Farm without raising our prices. That’s right, organic cuisine at conventional prices.

The family-owned and organic Chat Thai, Boon Cafe, Samosorn and Assamm restaurants have enjoyed incredible, loyal support from Sydney's diners. In return, we have launched a community initiative to repay that loyalty.
