uccello Overlooking the ivy pool, this Italian restaurant is a love letter to Italy, echoing its ethos of fresh flavours, use of local produce and cooking techniques.

Sitting atop ivy, this Italian restaurant provides a poolside oasis in the CBD. The recently refreshed uc***lo takes its cues from the Italian coastline. Chef Nigel Ward’s menu makes the most of the restaurant’s wood-fired oven and charcoal barbecue and is inspired by the traditional recipes and techniques he picked up on his travels throughout regional Italy. At the heart of Ward’s cooking is an

appreciation of provenance and a commitment to extracting every drop of flavour out of an ingredient. He works closely with small scale NSW farmers and producers and delivers a restrained and humble menu, where the produce is the hero of the dish. And, of course, there is a drinks list to match the relaxed, poolside vibe. Classic cocktails are given an Italian edge with provincial ingredients and produce. The Italian-leaning wine list has everything from light and fresh catarratto and grillo to the finest brunello and barolo, and great list of Provence rosé. There is also a line-up of exciting local producers and iconic Australian wines.
