We work directly with oyster farmers across NSW, shuck every oyster to order and store them in our wine cellar at 11–16°C so they’re served exactly as they should be. Never buried under ice.
On the menu right now are Organic Wapengo oysters from Australia’s only certified organic estuary. No pesticides, no chemicals and no run-off into the surrounding waters.
Balanced, creamy and lightly saline, with soft green notes that lean almost grassy and herbaceous.
Served simply with mignonette, lemon and hot sauce.
