Sach Ko Ang. Cambodian grilled beef skewers.

The recipe: fresh lemongrass, galangal, garlic, palm sugar, turmeric, fish sauce, black pepper. Marinated by hand, overnight, so the kroeung sinks deep into every fibre.

Then charcoal. Real charcoal. Grilled low and slow until the edges caramelise and the smoke does its magic.

The sauce? Tuk Meric — fresh lime juice, cracked black pepper, a pinch of salt. Simple but perfect.
