Sweet Norwegian langoustine, crispy kimchi crunch, fried pork skin, and fresh lime. Served over creamy and pickled cauliflower, then finished with a warm umami broth and a light kaffir lime & vermouth foam.

Asparagus season, Nathan’s way.

Two preparations, built layer by layer.
We start with a miso soup to refresh the palate — asparagus brunoise, miso flan, and a crisp of chicken skin.
On the plate: asparagus baked in coffee oil, topped with Lardo, alongside cream of asparagus, sake beurre blanc, wild garlic oil, lavas powder, and mousseline with miso.

And yes — the brioche on the side is there for a reason.
