When this photo was taken, we were only a few hours away fromopening De Aarde for the very first time, exactly twomonths ago.

The excitement of finally jumping into this new project we had worked on relentlessly, alongside an incredible team.

And nowcomes another kind of pleasure: stepping into the daily life of De Aarde.

A place we want, above all, to feel alive, honest, real, and good. Very good.

This summer, we will be turning an important page: the restaurant Dôme, as you know it, will welcome its last guests on Saturday September 6.

Together with Evangeline, we want to create, within this true architectural gem, a space where food and wine meet in an inviting atmosphere that makes you want to linger.

Imagine long white tablecloths, tableside carving, a generous dessert platter that lights up your eyes, and an outstanding wine list boasting nearly 600 references. In short, a lively, elegant yet unpretentious Parisian brasserie where you come and come-back to celebrate life.

As for my starred cuisine… stay tuned, it’s moving to a new home in January, just a few steps from the current Dôme.
