Smoked food can be traced back to the cavemen. It is believed that early cavemen would hang meat and other foods to dry in their homes and then accidentally discovered the smoke from a nearby fire would not only give the food a different flavour, but also helped to preserve it!

Charger plates have been in use since the early 19th century, but as formal dinners have become less common charger plates, despite adding SO MUCH to a table design, are rarely used… except for in Eden, because we never miss an opportunity to be extra. ​​​​​​​​

A5 Joshu wagyu from the Gunma prefecture in Japan. This meat is full of intense marbling (intramuscular fat) this particular piece has a grading score of 12/12. The very fatty meat requires focus for the chefs to cook correctly as it can over cook very easily. This very special beef is available as an enhancement to any Eden experience. ​​​​​​​​

Small plants and leaves have become a massive part of fine dining. Many of the micro-greens as we call them are very beautiful, but we try our best to find things that have strong flavours to enhance our dishes. The lamb roulade! Cured and smoked lamb belly, bacon wrapped around a mosaic of lamb tenderloin. This is accompanied by a lamb neck croquette and lots of fresh herbs. Carrots are the second star of the dish. The different textures are cooked in different methods combined with lamb jus and fat. Charred lemons are juiced and used as a gel to bring the typical freshness found on much of the summer menu.
