As I was watching the Food Network today, I got a craving for a Thai Lime soup I had in Toronto. Of course, I only had half of the ingredients I needed to make some (and no way to get to Toronto to just buy it😉) so I hopped into my kitchen and started building my own soup that would satisfy my craving.
Behold - Creamy Lemon Gochujang Soup.
Sour, creamy, spicy, salty; it's everything I wanted today🙌
I made this one with chicken, and will be doing a shrimp one next. Gochujang is a Korean red pepper paste that packs a bold flavour, but it's tempered nicely by the heavy cream. For veggies I used scallions, carrots, celery, red peppers, and spinach. Adding in lemon zest, juice of 1.5 lemons, 1 cup of cream (would have rathered coconut milk; next time), 3 cups of chicken broth, 2 tablespoons of flour, 1 tablespoon of minced garlic, coriander, parsley, salt & pepper.
Adding this, along with a couple variations, to my recipes! It will definitely make an appearance on a future menu😘
