Under The Table While studying culinary, I am offering daily dinner menu options at a set price, for pick up or meet up at specified locations. Prices range from $13-$16.

Food Safety certified, and profits help offset my medical expenses from my second double lung transplant. Just sharing my passion for cooking through my home-based to-go dinner business. Pick up locations are my home in Burton from 4-6pm (will provide exact address upon ordering), Lincoln Big Stop ~5:30-5:45pm, Walmart South ~6-6:30pm.

Hey friends! I haven't forgot about you all ;) I have a few unexpected things going on that will have me out of the kitchen for *hopefully* only a week or two. We managed to get the burst pipe fixed without too much issue, but we are working on some other house stuff that's affecting my ability to cook😅 I will be back soon and I will miss you all every minute❤️

As I was watching the Food Network today, I got a craving for a Thai Lime soup I had in Toronto. Of course, I only had half of the ingredients I needed to make some (and no way to get to Toronto to just buy it😉) so I hopped into my kitchen and started building my own soup that would satisfy my craving.

Behold - Creamy Lemon Gochujang Soup.

Sour, creamy, spicy, salty; it's everything I wanted today🙌

I made this one with chicken, and will be doing a shrimp one next. Gochujang is a Korean red pepper paste that packs a bold flavour, but it's tempered nicely by the heavy cream. For veggies I used scallions, carrots, celery, red peppers, and spinach. Adding in lemon zest, juice of 1.5 lemons, 1 cup of cream (would have rathered coconut milk; next time), 3 cups of chicken broth, 2 tablespoons of flour, 1 tablespoon of minced garlic, coriander, parsley, salt & pepper.

Adding this, along with a couple variations, to my recipes! It will definitely make an appearance on a future menu😘

Happy Sunday, friends. Unfortunately, I've come down with a cold of doom as of last week (but thankfully not Covid🙌), so I will be taking a few more days off. I am on the mend and hoping that I'll be back in the kitchen by Wednesday, but we will have to see how things go.

Happy Sunday, friends. Here is this week's menu:

Monday: closed

Tuesday: Linguine with clams, cherry tomatoes, and a white wine cream sauce. Served with garlic bread. ($14).

Wednesday: Grilled chicken wraps (white or whole wheat)
Veggie options: spinach, lettuce, tomato, sweet peppers, jalapeños, onion, cucumber, dill or sweet pickles, avocado, mushrooms, coleslaw mix.
Sauces: Ranch, Cajun, honey garlic, BBQ, tzatziki, Chipotle.
($12)

Thursday: Spin dip grilled cheese with bacon, served with creamy homemade tomato soup. ($13)

Friday: Spinach and goat cheese stuffed chicken breast, served with a cucumber & apple salad ($15)

TEST KITCHEN ITEM:

A smokey carrot soup with a candied prosciutto ($10).

Hope you all stay warm and toasty this weekend😌

My favourite drink to have on really cold days is fresh lemon juice, honey, and ginger in hot water. I usually prep a jug of it to keep in the fridge to drink hot or cold!

For a mug:

Juice from 1/4 of a lemon
1 Tablespoon of honey
1/2 teaspoon of minced ginger (or 4-5 small slices of root).
Add to hot water (or heat up with cold water) and enjoy!

For a jug (approx 2L):

Juice from 1 lemon
1/4 - 1/3 cup of honey
1-2 Tablespooons minced ginger (or several slices of fresh root)

Add to jug with 1 cup of HOT water and stir. This is so the honey will dissolve and flavours will release. Let sit for 5 minutes, then add the remainder of the 2L with cold water and pop it into the fridge to reheat by the mug, or drink cold.

*Both recipes can be adjusted to taste. Want it more tart? Add more lemon. More sweet? Add honey. A little spicy? Add more ginger.
