We have a new water mineral from Apax Lab called KONFLUX!

Think of it as a small boost for mouthfeel and sweetness. Just a few drops can help your coffee feel rounder and smoother, especially when the cup tastes clean but feels a little thin.

KONFLUX was first created for the 2025 World Brewers Cup and has since been used in competition routines around the world. It also won SCA Best New Product 2026 in Coffee Consumables at World of Coffee San Diego.

Great for baristas, competitors, cafés, or home brewers who want a little more depth, texture, and balance in the cup.

Available in 20ml and 100ml bottles.

A beautiful washed Ethiopia from Chelbesa One 🇪🇹

This coffee comes from Chelbesa One Washing Station in Gedeb, Ethiopia, where around 1,000 smallholder farmers deliver cherries grown at high elevation.

The coffee is carefully sorted, de-pulped, fermented for 2 to 3 days, washed, and then dried on raised beds for 7 to 10 days. The result is a clean, floral, and fruit-forward cup with lots of clarity.

🌍 Origin: Chelbesa, Gedeb, Ethiopia
🌱 Variety: Korume and Wolisho
🔄 Process: Washed
⛰️ Elevation: 1,950–2,200 masl
🤤 Tasting notes: Peach, dried mango, iced tea, blueberry, and jasmine

Brewing recommendations
Rest: 3+ weeks
Espresso: 1:2.5–2.7, 26–30s
Filter: 1:16–17, 94°C

01
A short, concentrated, espresso-style coffee. More diluted than espresso, but stronger and more textured than regular filter coffee.

* 22g coffee
* Medium-fine grind
* 86g water off-boil
* Paper filter on top and bottom
* Tamp lightly
* Add water, then pump/press slowly
* Takes about 30 seconds
* Drink straight or add water to taste

A longer soup-style brew that drinks more like a full cup of coffee.

* 22g coffee
* Medium-coarse grind, around pour-over or slightly coarser than standard AeroPress recipes
* 220ml water at 95°C
* Paper filter on top and bottom
* Tamp lightly
* Add water, then pump/press very slowly and continuously
* Aim to finish pressing in about 1.5 to 2 minutes
* Ready to drink as is

03 — Cold Brew

A quick cold brew-style concentrate for iced drinks.

* 40g coffee
* Fine grind, closer to espresso
* 160ml cold or room-temperature water
* Tamp firmly
* Steep for 5 minutes
* Then pump/press until the concentrate stops dripping
* Serve over ice and dilute to taste with around 130ml water or milk

Sebastián Gómez’s Castillo Natural from La Divisa brings notes of cherry, mango, tangerine, strawberry, and caramel.

Processed with 45 hours of aerobic fermentation, then dried on raised beds for 11 days.

Bright, sweet, and easy to enjoy.

Filter: 1:15.5 at 92°C
Espresso: 1:1.7 at 91°C, 25 seconds
Best after 2–3 weeks of rest.

🔘 # 2 Regulator — Dark Grey — slowest max flow rate
⚫ # 4 Regulator — Black — medium max flow rate
🟠 # 8 Regulator — Orange — fastest max flow rate, Switch compatible

Note that # 2 and # 4 are sold as a pair. # 8 is sold on its own.

Same grind, same recipe — going from fastest to slowest regulator adds 15-30 seconds of contact time (depending on the coffee) and predictably increases TDS. Worth repeating: same grind size, more contact time, more TDS.

We’ve got a pretty dope decaf on bar right now ☕️

Our Colombia El Placer Red Fruit Co-Fermented EA Decaf is a Caturra lot from Sebastian Ramirez’s El Placer Coffee Project in Quindío, Colombia.

The process is very fun: whole cherries are fermented anaerobically for 120 hours, then de-pulped and fermented again for 72 hours with red wine yeast, dehydrated strawberries, and red fruit glucose before going through sugarcane EA decaffeination.

The result is a lively, fruity, and sweet decaf with notes of strawberry, orange cream, raspberry, vanilla, and plum.

Great as espresso, lovely with milk, and also a fun choice for espresso tonic.

Available online, in store, and as a decaf upgrade at the shop.
