Like children, macarons need time to mature 😅.
What does that mean?
Before macaron shells are filled, they're dry and crisp and lack much taste. Once the filling gets piped in, they go into the fridge for 24-48 hours to "mature". During this time, the flavour from the filling travels throughout the shell, filling in any air bubbles and transforming the texture from hard and crispy to soft and chewy. The most challenging part of making macarons is waiting 2 days to try them! 🤣
