Our Confit Duck Leg is prepared using the traditional French technique known as 𝘤𝘰𝘯𝘧𝘪𝘵, which comes from the French word for preserve. In practice, this means that we slow-cook the duck leg in its own fat for fall-off-the-bone tenderness.

We then pair the duck leg with golden roasted fingerling potatoes, seasonal vegetables and a Canadian blueberry gastrique for extra sweetness and acidity to balance the richness of the meat.
