WE FINALLY OPENED IN INVERMERE!!!! Things have been going so well that we need to hire 1 or 2 people to help us take orders and cut pizzas!

We’re looking for energetic and friendly individuals to join our team for the last 2 months of summer!

Available shifts are
-4:30-9:30PM Monday-Sunday, more urgently)
-11:30-2:30PM (Thursday-Sunday)

Pay: $20/hour + shared tips.

We’re still waiting for our oven to work so that we can open, we’d love to share some good news, however this year has been probably the most problematic and challenging one for us by far.

From dealing with contractors to solving puzzles with non-functioning oven to a suspended Google business account, the list goes on and on. 😭

Hopefully next post is about our opening date, we’ll need so much charm and luck to turn the situation around 🥲

How can we view all those roadblocks, I mean I can deal with one or two, but not 100 roadblocks back to back in a row….

Our final day in Lethbridge has come 😭

So so many people showed up in the past 4 weeks to cheer us on (some interrogated us a bit), being blown away by the support is an understatement.

Our last and most important appreciation post is for all of you, our patrons. Thank you for trusting 2 newbs to make you pizzas four years ago, without your patronage throughout the years, we wouldn’t be able to reach anything.

If I have to rate customers, I can arrogantly say that our customers are AAA grade, for the understanding, the tolerance, and the openness. The understanding that good food takes time, the tolerance of occasional burnt bubbles, the openness of trying out new things all the time.

If I own an airline company, I’d be organizing daily pizza trips from lethbridge to invermere, flight tickets are on us, so you can spend all your money on our pizzas.

If I have enough money to buy the whole town of invermere, I’d be able to bring all of you to invermere with us, I’d demand your bosses to give you work-from-home jobs from now on.

We feel extremely fortunate and blessed to have such a loyal and supportive clientele. Sometimes I feel like we don’t deserve you, most of the time it feels like building an empire from ground up. Frankly, getting to know all of you feels like winning a lottery.

As much as we’d like to retire soon, we do have a very strong urge to come back to lethbridge in the near future for y’all, so let’s hope it’s not a divorce, it’s only a 2-year breakup ❤️

2 days remaining for our pizzas, holy, what a week so far 🥹

Of course, we have to make a post about the family support, which is so crucial for our growth so far.

I’m jealous of truck owners who have kids as young workforces on their trucks, but then I think of the puberty time that I’ll have to deal with before those kids can be “useful”, I’m more grateful of having my parents and my grandparents as the workforce instead 😏

My grandma is legit the most hardworking person I’ve worked with, she’s never complaining, she’s always ready to work, she even delayed her flight back to China for 3 summers now just to help us with the truck. I wish I could clone 100 copies of my grandma, then I’ll have an invincible company, heck, we might even make it to top 100 businesses in Canada!

(Again, my essay is too long to fit in the caption, therefore the middle part (best part) is hidden in the pictures of this post)

Lastly, I’d like to make a toast to my dogs, they’re constantly pushing us to make more money to support their expansive life style, their expansive food, and their expansive vet bills. I’m not joking, me and matthis are low maintenance, we’d survive on making $1000/month, but now with the financial pressure from my dogs, we need to make 5 times of that to feel comfortable. So yea, if you feel unmotivated to work, get a dog, they’ll push your limit and help you reach your full potential 🐶

3 days count down to our closure, wow, it’s getting real 🥹

Today’s appreciation post is about our amazing team. Before this summer, we never realized what great staff mean to a business, but now we know, they are game changers.

This summer, we did way more events and catering with our truck compared to all previous summers, but it didn’t even feel more exhausting, because we had such a strong back bone, thanks to the best team a kitchen could ever ask for. ❤️

4 days left for Vesano Pizza, gotta capitalize on people’s Fear Of Missing Out while we can ;)

Anyways! Today, we want to make a post thanking our business partner, .brew . We don’t acknowledge enough how brave and open-minded the owner Kelti and the landlord Jon were, when we approached them with the idea of moving in, in the summer of 2022. They’re visionary, they saw the potential in us, hopefully we have proved our “worth” to them by now 😁

Since then, we were introduced to the concept of community building, it was inspiring to see so many talents walk through our door over the years, to meet new people and build bonds with them, to host really unique shows and offer wholesome experience, to provide a safe and open space for different groups of people, it was awesome 🤩

The taproom is not simply a dining space, it’s a community space, where friends hang out after work, where families celebrate birthdays, where guests experience different shows. The Theory Brew team has created such a great “third space” for the people of Lethbridge, a place where everyone feels respected and welcomed. (Shout out to Genna from CKXU to organize all those sick shows!!)

Now we’re parting our ways, but we sincerely wish the best to Theoretically Brewing team, because a community needs selfless businesses like them ❤️

5 days left before closing, the feeling is starting to sink in. For our last week, we’d love to make an appreciation post everyday to all people, businesses and parties that have helped us along our journey in Lethbridge!

Our first appreciation post is dedicated for the amazing and frankly the best food truck community.

We learned so much from other food truck owners, from which events to attend, to how to increase the capacity. When our truck broke down, so many truck owners, who at the time didn’t even know us, helped us financially, we will never forget those kind gestures. (Shouts out to Santeria, Kona Ice, Arts and Craft pizza, MNP, Cupper’s and customers who supported us during that difficult time)

From the bottom of our hearts, we thank all food truck owners, event organizers, businesses, all of which we crossed path with, thank you for coaching us when we started, thank you for helping us when we got in trouble, thank you for making our dream come true ❤️

Oh man, time flies, only 2 weeks left to get our pizzas before they’re gone for good 😭

To make the best of last two weeks, we’ll bring back fan’s favs:
1️⃣Parma (Queen’s base + arugula + proscuitto + balsamic drizzle)
2️⃣4-Maggie (ricotta base + Parmesan + mozzarella + blue cheese + mushroom)
3️⃣Bing (Chilli oil base + cheese + braised beef + green onion)
4️⃣Blue moo (olive oil base + cheese + blue cheese + strips of beef + pickled banana pepper + balsamic drizzle)

We’ll prepare DOUBLE amount of doughs which we normally do for the last two weeks, the last thing I want to do is to disappoint any of you guys with “sorry, we’re sold out”….

We love to see groups coming in! But if your is bigger than 6 people, please make sure to make a reservation with us at least a day before you come in (before 5PM the day before). By doing so allows us enough time to prepare extra doughs for your group :)

Thank you to everyone who braved the snow, the cold and the slippery roads last two weeks just to patronize us, the overwhelming support firms up our plan to come back to this amazing city in the near future again ❤️
