The sixth stout sollab #5 is "The Unseen" - an imperial dessert stout aged in oak barrels with raspberry s'mores. The Unseen dwells behind you, projecting the feeling of being watched. It sees you. This imperial dessert stout was blended in collaboration with our friends at the Cheshire Cat Pub using chocolate, marshmallow and raspberries (and a bunch of honey for the graham cracker flavour). You cannot hide.

Stout sollab #5 is the return of "The Briny Deep" - an imperial dessert stout aged in oak barrels with sea salt and caramel. The Briny Deep is home to many tentacled horrors. Do not swim there. Our friends at in Halifax sourced some local hand-harvested sea salt from OK Sea Salt for this salted caramel dessert stout. The brew day(s) incorporated a 26 hour boil which resulted in a lot of caramelized sugars reminiscent of a toffee filled chocolate bar. The sea salt lends a soft dimension to the rich flavour.
Fun bit of trivia.. the creature on the label is a dead ringer for the artist's husband :)

Stout sollab #4 is a re-release of one of our favorites from a few years back. "Creatures of my dreams" is an imperial dessert stout aged in oak barrels with cacao, cinnamon, and cayenne pepper. Blended in collaboration with our friends at Temporal Artisan Ales in BC. I can only ever catch glimpses of them, but they are there in my peripheral vision. They will get me if I make a mis-step. This imperial dessert stout was blended in the style of a spiced hot chocolate using organic fair trade cacao by Camino in Ottawa, grown by small-scale farmers in Peru and the Dominican Republic. We spiced it up with a pinch of cinnamon and cayenne pepper.
Make sure to shake this one up real good, as there's so much cacao in here that it tends to settle. It should pour a black/brown :)

Stout sollab #3 was blended in collaboration with our friends at Third Moon. The Bone Snatcher collects the bones of sleeping children if they sleep in past sunrise. This imperial dessert stout was aged in bourbon barrels and blended with a special concentrated cold brew coffee prepared for us by our friends at Equator in Almonte. A sweet dose of dark maple syrup from our neighbour, Stoneridge Syrup rounds out this breakfasty treat.

The second stout release is "It Hungers" - An imperial dessert stout aged in bourbon barrels with deconstructed crème brûlée! Beyond the cosmological horizon, a vast hunger lurks - feeding on the embers of the first black holes, seeking eternally to quench its insatiable hunger in the vast blackness. This imperial dessert stout was blended with our friends at Chelsea & Co using vanilla custard and burnt sugar. May it be consumed before all is consumed.
Please note - this beer has a super rich mouthfeel, like heavy whipping cream. It's not quite a pudding beer this time, but it's about 1/3 of the way there -- thick, but still pours nicely!

One of our six releases, Yowie is an imperial dessert stout aged in bourbon barrels with coffee & deconstructed chocolate bars. In the shadowed depths of the Australian bush, where the trees grow too close and the wind forgets to blow, the Yowie awaits. This imperial dessert stout was blended in collaboration with our friends at BAOS Podcast for their 10th anniversary using beans roasted by Found Coffee, and deconstructed chocolate bars (try to guess which). If you hear branches crack, and your dog won’t stop growling at the dark, it’s already too late!.

It feels weird to even say it, but April 15th, 2025 marks 10 years of BAOS Podcast. From a couple blokes recording in an apartment in Montreal to literally travelling the world interviewing some of the best breweries on the planet, it’s been a TRIP to say the least. ☘️ The Green SMÜV is back! This barrel aged smoothie sour is blended with pureed kiwi, mango, spinach and mint. It's straight up green, has a fruit smoothie texture, and is sweet and sour. Kind of reminiscent of a tropical mojito, but opaque and thick. ☘️
