Untamed - A Signature Whisky by Fairmont Chateau Lake Louise
schabert - regional manager of mixology for Fairmont Hotels & Resorts in Canada’s Western Mountain Region created this whisky, in partnership with Park Distillery in Banff, to give our guests a unique and local offering. It is 100% Canadian Rye and is the only whisky to be aged in Banff National Park.

Untamed – Tasting Notes

Nose: Candied orange rind with subtle notes of dark chocolate, black pepper and overripe plum
Palate: Strong cinnamon spice and wildflower honey with green fennel and crabapple
Finish: Leather and to***co leaf with a strong lasting choke cherry mulled wine
Best Served with: A side of water to open it up, or over ice.
Best Paired with: Steak, charcuterie or dark chocolate

We currently live in a world that is changing rapidly – by the day and by the hour. As we navigate through these times of change and uncertainty, we do so with the safety of both our loyal and valued guests and employees as our highest priority. We must support our local authorities as they work to halt the spread of COVID-19. And so, we have made the difficult decision to temporarily close the doors of our hotel. Effective Friday, April 10, 2020 at noon, this also includes all guest services, as well as overnight stays, fitness centres & health clubs, food & beverage offerings, spas and event spaces. This certainly isn’t goodbye, it’s farewell for now. We’ll be in touch with updates here and on www.fairmont.com/lake-louise, to ensure that our dedicated community is informed, connected and supported through these trying times.
