Hatch Crafted Coffee Bar, Roastery & Brewery. Driven by quality, innovation & experimentation. It blossomed into a ritual that gave him a daily sense of comfort and stability.

The story of Hatch Cold Brew starts with one man’s enduring love for coffee, and the simple, reliable pleasure it brought him in his years on the road. After a decade in manufacturing, travelling constantly to meet the demands of his job, Alfonso would settle for a short time on a remote factory site in the African countryside, a world away from his roots in Toronto. In spite of his nomadic past, over the years he had grown accustomed to hand-grinding and manually brewing his own coffee every morning. Access to freshly roasted coffee was rare, so he took it upon himself to make his own...

ABDO ABA MECHA — EA DECAF 🇪🇹

A naturally sweet and approachable decaf from Abdo Aba Mecha, a producer in Ethiopia’s Limu region. Working across a 30-hectare farm nestled beneath a dense forest canopy, Abdo grows local heirloom varieties at high elevations, combining traditional farming practices with careful harvesting and drying.

This lot uses the Sugar Cane (EA) decaffeination process, which uses naturally derived ethyl acetate to gently remove caffeine while preserving the coffee’s character. The result is a clean, sweet cup with notes of peach, plum, and chocolate.

Reminds us of: Peach, Plum, Chocolate

Origin: Limu, Jimma, Ethiopia
Producer: Abdo Aba Mecha
Variety: 74110
Process: Washed & Natural EA Decaf

RUMUDAMO WASHED 🇪🇹

From the highlands of Sidama, Rumudamo Station brings together more than 600 smallholder farmers, producing coffees that showcase the region’s exceptional quality and character. Managed by Asefa Dukamo Korma, the station has earned international recognition, placing 2nd and 3rd in Ethiopia’s 2020 Cup of Excellence.

This washed lot highlights the care behind every stage of processing. The result is a clean, expressive cup that lets the character of this high-altitude growing region shine.

FINCA LOS CEDROS GEISHA NATURAL 🇨🇴

Following our showcase of Finca Los Cedros Sidra, we’re excited to share another exceptional coffee from Oswaldo Toro’s farm. After years of learning from the Lasso family and working with the Finca El Diviso production team, Oswaldo is now bringing that experience to his own specialty coffee project.

Los Cedros is built around selective harvesting, controlled fermentation, and intentional post-harvest experimentation. With a focus on how small changes in timing, temperature, and fermentation can transform a coffee, Oswaldo combines technical precision with a commitment to his local community and the future of Colombian coffee.

This Geisha undergoes a carefully controlled process involving oxidation, anaerobic fermentation with mosto, thermal shock, and slow, low-temperature drying to develop aromatic complexity while preserving clarity.

Aroma: Purple Grape, Berries
Flavour: Bubble Gum, Dried Strawberry, Mint, Orange Pekoe

Origin: Bruselas, Pitalito, Huila, Colombia
Producer: Oswaldo Toro
Variety: Geisha
Process: Mosto Natural

ARAUZ GEISHA LOT #1212 DRD NATURAL 🇵🇦

Rooted in over 40 years of family coffee-growing tradition, the Arauz family began their journey in commercial coffee before embracing specialty production. Today, Richard Arauz carries forward his father’s vision, developing exceptional varietal coffees across Panama’s unique growing regions.

This Geisha lot comes from the family’s Cotito farm, where only the ripest red cherries were selected. A carefully controlled cold-room fermentation began with 48 hours, followed by another 5–6 days at 14–16°C. The coffee was then slowly dried in a dark, dehumidified room for 18–20 days, preserving its delicate aromatics and layered fruit character.

A beautiful expression of Panamanian Geisha, bringing together lifted florals, jammy berries, and a deep maple-like sweetness.

Aroma: Floral, Berry Jam

Flavour: Floral, Strawberry, Blackberry Jam, Pear, Maple Syrup

Origin: Cotito, Chiriquí, Panama
Producer: Richard Arauz
Variety: Geisha
Process: Cold Room Natural

BAHIRE WASHED 🇧🇮

For years, a particular harvest from Burundi’s Ngozi Province consistently stood out on the cupping table. Driven by a personal connection to the region, our importing partner, JNP Coffee, set out to trace that exceptional quality back to the exact hill where it originated.

The result is Bahire, a beautiful expression of micro-terroir and its influence on flavour clarity and sweetness. Meaning “be well” in Kirundi, Bahire is a fitting name for a coffee that brings warmth and balance to the cup.

Reminds us of: Berries, Plum, Honey

Origin: Ngozi, Burundi
Producer: Smallholder Farmers
Variety: Bourbon
Process: Washed

FINCA LA HERMOSA WASHED 🇬🇹

Finca La Hermosa is a revitalized family farm in Acatenango, Guatemala, built on the vision of fifth-generation coffee farmer Max Perez and his wife. Fifteen years ago, they transformed an abandoned plot into a thriving coffee estate, renovating the land, planting shade trees, and building their own wet mill.

Sustainability is at the heart of their approach. The farm currently operates at 75% organic and uses a closed-loop agricultural system, repurposing manure from its 25,000-chicken egg farm as compost for the coffee trees.

Carefully harvested at peak ripeness, the cherries are processed on the same day to preserve clarity and avoid unwanted fermentation. The washed process uses natural fermentation to remove the mucilage, followed by sun-drying on patios and raised beds.

Reminds us of: Pear, Apple, Walnut, Toffee

Origin: Acatenango, Guatemala
Producer: Max Perez
Varieties: Bourbon, Caturra
Process: Washed
