My go-to homemade granola bars 🤎

Dry ingredients:
- 2 cups gluten-free rolled oats
- ½ cup nuts/seeds/dried fruits of choice (I used pumpkin seeds + raisins) - have fun with it!!
- ¼ cup chia seeds (needed to help bind)
- Pinch of salt
- 1 tsp cinnamon
Wet ingredients:
* ½ cup nut butter of choice (I used cashew butter)
* 1/3 Cup creamed maple honey from (maple syrup for vegans)
* 2 tbsp coconut oil
* 1 tsp vanilla extract
Instructions:
1. Mix dry ingredients in a bowl.
2. Over low/medium heat, warm up ALL WET INGREDIENTS (until warm and smooth - it’ll be easier to mix).
3. Combine wet + dry ingredients.
4. In a 8x8 pan, press mixture down FIRMLY into a parchment-lined pan / dish. Really pack it down!
5. Refrigerate for 1–2 hours until firm. (better overnight)
6. Slice into bars and store in the fridge. 🧡
